Asparagus & Lemon Chicken Stir Fry
A Healthy but Flavorful Stir Fry Dish - the Perfect Start to the New Year!
Ingredients:
- 2 Boneless Skinless Chicken Breasts, Sliced
- 3 Tablespoons Low Sodium Soy Sauce
- Salt and Pepper, To Season
- 2 Tablespoons Minced Garlic
- 1 Tablespoon Garlic & Herb Seasoning
- 1 Teaspoon Sugar
- 1/2 Lemon, Zested
- 1/2 Lemon, Juiced
- 1/2 Tablespoon Olive Oil
- 1 Tablespoon Red Pepper Flakes
- 4 oz Asparagus
- Cooked Rice, For Serving
Instructions:
1. Add Soy Sauce, Salt, Pepper, Minced Garlic, Garlic & Herb Seasoning, Sugar, Lemon Zest and Lemon Juice into a bow. Combine and let the Chicken Marinate.
2. Once well marinaded, add Olive Oil to a large pan over Medium High Heat. Reserve Marinade. Add the Chicken and cook for about 4 Minutes, or until no longer pink on the outside.
3. Add the reserved Marinade, Asparagus, and Red Pepper Flakes to the pan. Cook until the Asparagus is tender and Chicken is cooked through, about 2 Minutes.
4. Serve over a plate of Cooked Rice and Enjoy!
