      Cheesy Potato Soup

      Cheesy Potato Soup

      Note: Add a little Cornstarch to thicken the soup to your liking.
      Ingredients
      • 6 Cups Peeled and Chopped Potatoes
      • 2 Cups Chopped Onion
      • 1 Carrot, Grated
      • 4 Cups Chicken Broth
      • Salt and Pepper, To Taste
      • 1 Tablespoon Minced Garlic
      • 1/4 Teaspoon Red Pepper Flakes
      • 4 Tablespoons Butter
      • 1/3 Cup Flour
      • 2 Cups Whipping Cream 
      • 1/3 Cup Sour Cream
      • 1 Cup Shredded Cheese
      • Chopped Scallions, For Serving
      • Cooked Chopped Bacon, For Serving

      Instructions:

      1. Add all Ingredients to the Crock Pot except for the Shredded Cheese. Set and cook on Low for 6 Hours, or on High for 4 Hours. 

      2. Add the Shredded Cheese about 5 Minutes before Serving or until Melted.

      3. Serve with Scallions and Bacon and Enjoy!

      Crock Pot White Chicken Chili

      Enjoy this Creamy flavorful Chili made right in your crock pot!

      Ingredients:
      • 2 Cans Great Northern Beans, Drained and Rinsed
      • 1 Tablespoon Extra Virgin Olive Oil 
      • 1 Lb Boneless Skinless Chicken Breasts, Diced
      • 3 Teaspoons Kosher Salt, Divided
      • 1 Yellow Onion, Diced
      • 3 Cloves Garlic, Minced
      • 8 oz Green Chilis 
      • 2 Teaspoons Ground Cumin
      • 1 Teaspoon Dried Oregano 
      • 1/4 Teaspoon Cayenne
      • 1 Teaspoon Chili Powder
      • 1/2 Teaspoon Freshly Ground Black Pepper
      • 3 Cups Low Sodium Chicken Stock
      • 1 Cup Heavy Cream
      • 2 Cups Frozen Corn, Thawed
      • 1 Cup Carrots, Diced
      • 1 Cup Celery, Diced
      • Juice from 1 Lime 
      • Shredded Cheddar Cheese for Serving
      • Fresh Cilantro, Chopped  for serving
      • Sour Cream for Serving 

      Instructions: 

      1. Add all ingredients in your Slow Cooker. Cook on Low for 4 to 6 Hours. 
      2. Serve with Cheese, Cilantro and Sour Cream.
