Cheesy Potato Soup
Note: Add a little Cornstarch to thicken the soup to your liking.
Ingredients
- 6 Cups Peeled and Chopped Potatoes
- 2 Cups Chopped Onion
- 1 Carrot, Grated
- 4 Cups Chicken Broth
- Salt and Pepper, To Taste
- 1 Tablespoon Minced Garlic
- 1/4 Teaspoon Red Pepper Flakes
- 4 Tablespoons Butter
- 1/3 Cup Flour
- 2 Cups Whipping Cream
- 1/3 Cup Sour Cream
- 1 Cup Shredded Cheese
- Chopped Scallions, For Serving
- Cooked Chopped Bacon, For Serving
Instructions:
1. Add all Ingredients to the Crock Pot except for the Shredded Cheese. Set and cook on Low for 6 Hours, or on High for 4 Hours.
2. Add the Shredded Cheese about 5 Minutes before Serving or until Melted.
3. Serve with Scallions and Bacon and Enjoy!
