Broccoli Breakfast Quiche
This Veggie Quiche is easy to make and full of flavor. Perfect to serve for Breakfast or Brunch.
Ingredients:
- 2 Cups Broccoli, Grated
- 3 Cups Potato, Grated
- 3/4 Cup Shredded Cheddar Cheese, Divided
- 3/4 Cup Shredded Mozzarella Cheese, Divided
- Salt and Pepper To Season
- 1 Tablespoon Olive Oil
- 5 Eggs
- 1 Cup Broccoli, Chopped
- 10 Grape Tomatoes (or Sun-dried Tomatoes for extra Flavor)
- 1 Small Onion Diced
- 1/4 Cup Cottage Cheese
- 2 Tablespoons Half & Half
- 1 Teaspoon Red Pepper Flakes
- 1 Teaspoon Garlic Powder
- Note: Place the Pie Dish onto a Baking Sheet before putting in the oven.
Instructions:
- Preheat your oven to 350ºF.
- Combine Broccoli, Potatoes, 1/2 Cup Cheddar Cheese, 1/2 Cup Mozzarella Cheese, and Salt and Pepper into a bowl. Stir well.
- Grease a 9 Inch Pie Dish with Olive Oil. Pour your mixture from the bowl into the pie dish. Press into the dish well until firm. (Note: We use a Measuring Cup to help press the crust down)
- Bake the crust for about 45 Minutes (or until the potatoes are browned)
- Mix together the Eggs, Chopped Broccoli, Tomatoes, Onion, Remaining Shredded Cheese, Cottage Cheese, Half & Half Cream, Red Pepper Flakes and Garlic Powder.
- Pour your egg Mixture into the cooked crust. Pop back in the oven and allow it to cook for about 25 Minutes or until the Egg is firm.
- Cool before Serving.
