Chicken Fajita Pasta
A Quick One Pot Dish - a flavorful dish thats perfect to make on a weeknight!
Ingredients:
- 3 Tablespoons Canola Oil
- 3 Chicken Breasts, Sliced
- 1 Red Bell Pepper, Sliced
- 1 Orange Bell Pepper, Sliced
- 1 Yellow Bell Pepper, Sliced
- 1 Yellow Onion, Sliced
- 1 Teaspoon Salt
- 1 Teaspoon Freshly Ground Black Pepper
- 2 Tablespoons Chili Powder (1 Tablespoon for less spice)
- 2 Tablespoons Cumin (1 Tablespoon for less spice)
- 2 Tablespoons Garlic Powder
- 1 Tablespoon Paprika
- 1 Tablespoon Light Brown Sugar
- 3 Cups Milk
- 2 Cups Chicken Stock
- 4 Cups Penne Pasta
- 1/2 Cup Pepper Jack Cheese, Shredded
- 1/2 Cup Sharp Cheddar, Shredded
Instructions:
- Cook Pasta according to directions on package.
- Add Canola Oil to a large pot over High Heat.
- Add the Chicken Breasts to the pot and cook for about 5 to 6 Minutes, or until no longer pink. Remove from the pot and set aside.
- Add the Peppers and Onion and cook until the onion is translucent, which should take about 6 Minutes.
- Return the Chicken back to the pot. Add Salt, Pepper, Chili Powder, Cumin, Garlic Powder, Paprika, and Light Brown Sugar. Stir until until evenly coated.
- Add Milk, Chicken Stock, and Pasta to the pan. Stirring Constantly to keep pasta from sticking.
- Cook until the sauce thickens and coats the pasta well.
- Add Cheese to the pot and mix well.
- Serve and Enjoy!
