Mushroom and Spinach Pasta
A Flavorful Vegetarian Dish perfect to make on a weeknight.
Ingredients:
- 3 Tablespoons Extra Virgin Olive Oil
- 1 1/2 Lb Chicken Breast, Cubed
- Salt and Pepper, To Taste
- 2 Teaspoons Cajun Seasoning
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Paprika, PLUS 1/2 Teaspoon Paprika
- 1/2 Yellow Onion, Diced
- 2 Cups Cremini Mushrooms, Sliced
- 3 Cloves Garlic, Minced
- 1 Teaspoon Oregano
- 1/2 Teaspoon Dried Thyme
- 1/2 Teaspoon Red Pepper Flakes
- 1/2 Teaspoon Paprika
- 4 Cups Vegetable Broth
- 1 Cup Heavy Cream
- 1 Lb Farfalle Pasta
- 5 oz Spinach
- 1 Cup Parmesan Cheese
- Juice from 1/2 Lemon
Instructions:
- In a Large Pot add 2 Tablespoons Olive Oil over Medium Heat. Season Chicken with Salt, Pepper, Cajun Seasoning, Garlic Powder and Paprika. Add to the pot. Cook chicken through and set aside.
- Add remaining Olive Oil to the pot along with Onion. Cook for about 2 Minutes.
- Add Mushrooms and Garlic. Stir to combine. Season with Pepper, Oregano, Thyme, Red Pepper Flakes and Paprika. Stir.
- Add Vegetable Broth and Heavy Cream to pot. Stir and bring to a Boil. Add the Pasta.
- Stir every minute or two. Cook pasta according to the instructions on the package, or until the pasta is al dente.
- Add Spinach and Chicken to the pot. Stir until Spinach wilts and is cooked down. Season with Salt.
- Stir in the Parmesan Cheese well until melted well into sauce.
- Stir in Lemon Juice.
