Mediterranean Meatballs
Looking for something a little different to make for dinner? These Mediterranean Meatballs are a delicious twist to a classic.
Ingredients For Sauce:
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Red Bell Pepper, Sliced Thin
- 1 Green Bell Pepper, Sliced Thin
- 1 Yellow Onion, Sliced Thin
- 2 Jalapeños, Seeded and Sliced Thin
- 1 1/2 Teaspoons Cumin
- 2 Teaspoons Paprika
- 1/2 Teaspoon Salt
- 1 Can Whole Stewed Tomatoes
- 1 Lb Ground Turkey
- 2 Teaspoons Paprika
- 1 1/2 Teaspoons Cumin
- 1/2 Teaspoon Salt
- 2 Cloves Garlic, Minced
- 1 Bunch Cilantro, Chopped Finely
- 2 Eggs
- 1 Cup Bread Crumbs
- Crumbled Feta, For Serving
- Fresh Parsley, For Garnish
- Heat up 2 Tablespoons Olive Oil over Medium Heat in a large saucepan with the lid on.
- When its nice and hot, toss in the Bell Peppers, Onions and Jalapeños. Let them cook stirring often, for about 10 Minutes, or until the onions are translucent.
- Season with the Cumin, Paprika and Salt. Stir and allow it to become fragrant.
- Crush up the Tomatoes using your hands, and add them one at a time to the saucepan. Let the mixture simmer until thickened.
- Meanwhile, combine the ground turkey with the ingredients for the meatballs.
- Shape them into balls and place carefully into the pan with the sauce. Cover and cook on low heat for about 10 minutes.
- Remove the cover and let them cook for another 10 minutes or until they are fully cooked through.
- Top with Crumbled Feta and Fresh Parsley.
