Zucchini Pecan Bread
A Bread to enjoy for Breakfast or for dessert.
Ingredients:
- 1 Cup White Sugar
- 1 Cup Light Brown Sugar
- 3 Eggs
- 1/2 Cup Vegetable Oil
- 1/2 Cup Applesauce
- 1 Tablespoon Vanilla Extract
- 3 Cups All Purpose Flour
- 1 Teaspoon Nutmeg
- 3 Teaspoons Ground Cinnamon
- 1 Teaspoon Baking Powder
- 1 Teaspoon Salt
- 1 Teaspoon Baking Soda
- 2 Cups Grated Zucchini
- 1 Cup Chopped Pecans
Instructions:
- Preheat your oven to 325ºF.
- Grease two 8x4 Loaf Pans.
- In a bowl, combine the Flour, Salt, Baking Powder, Baking Soda, Nutmeg and Cinnamon together.
- In another bowl, combine the Eggs, Oil, Vanilla Extract and Sugar and beat well.
- Add the dry ingredients to the wet mixture. Beat well.
- Stir in the Grated Zucchini. Mix in the Pecans until well combined.
- Add the mixture into the greased pans.
- Pop in the oven for about 55 Minutes (or until baked through).
- Let it cool on rack before removing from the pan.
- Serve and enjoy!
