Tuna is so versatile. Whether its a quick Tuna Salad Sandwich, or something a bit more complex like a Mediterranean Antipasto.
If you're looking for something a bit out of the ordinary, try making a Mediterranean Antipasto Tuna. This is packed with protein and fiber, this tuna and bean salad is ready in a flash. For an extra kick, add a pinch of crushed red pepper or cayenne. Combine beans, tuna, bell pepper, onion, parsley, capers, rosemary, lemon juice and 2 tablespoons oil in a medium bowl. Season with pepper. Toss in with Arugula and enjoy. If you would like additional dressing drizzle olive oil and lemon juice over your greens.
This Avocado Tuna Salad is super easy and can be done in seconds. Instead of using mayo for your tuna sandwich, try making it with avocados. It adds a creamy flavor that is super delicious. Just season with salt and pepper and enjoy with your favorite wheat bread.
Make lunch fun with an Asian inspired wrap! These tuna wraps were inspired by spicy tuna sushi rolls. We love how they taste with peppery watercress, but other greens, such as arugula, romaine, escarole or even radish sprouts, would taste great in the filling. If you want to play on the sushi inspiration, stir some Wasabi into the soy sauce for dipping and serve with pickled ginger. To prepare
- Combine tuna, mayonnaise, hot sauce and scallion in a medium bowl. Combine rice and vinegar in a small bowl.
- Spread one-fourth of the tuna mixture over a wrap. Top with 1/2 cup rice, 3/4 cup watercress, 4 avocado slices and one-fourth of the carrot matchsticks. Roll up and cut the wrap in quarters or in half. Repeat with the remaining filling and wraps. Serve with soy sauce for dipping, if desired.
