Shrimp Scampi Linguine

  • 1½ Lbs Unpeeled Large Raw Shrimp
  • 1 Package (9 oz) Refrigerated Linguine
  • ¼ Cup Butter
  • ¼ Cup Extra Virgin Olive Oil
  • ¼ Cup Green Onions, Chopped
  • 2 Garlic Cloves, Minced
  • 1 Tablespoon Dry White Wine
  • 2 Teaspoons Fresh Lemon Juice
  • Salt and Pepper, To Taste
  • 1 Tablespoon Fresh Dill, Chopped
  • 1 Tablespoon Fresh Parsley, Chopped
  1. Peel the Shrimp, leaving the tails on. Devein if desired.
  2. Cook the pasta according to the directions on the package.
  3. Meanwhile, place a large skillet over Medium High Heat and melt the Butter with the Extra Virgin Olive Oil.
  4. Add the Green Onions and Garlic and saute for about 4 to 5 Minutes, or until the Onions are tender.
  5. Add the Shrimp and Wine. Season with Salt and Pepper. Let cook over Medium Heat. Stirring occasionally. Let cook for 3 to 5 Minutes, or just until the shrimp turns pink.
  6. Stir in the Dill and Parsley. Remove the Shrimp with a slotted spoon. Reserving sauce in the pan.
  7. Add the cooked Linguine to the sauce in the skillet. Toss to coat.
  8. Transfer pasta to a serving bowl. Top the Linguine with the Shrimp.
  9. Serve and Enjoy!
