Slow Cooked Red Beans and Rice

Ingredients
  • 3 Cups Water
  • 1 Cup Dried Red Kidney Beans
  • 1 Cup Onion, Chopped
  • 1 Cup Green Bell Pepper, Chopped
  • ¾ Cup Celery, Chopped
  • 1 Tablespoon Fresh Thyme, Chopped
  • 1 Teaspoon Paprika
  • ¾ Teaspoon Ground Red Pepper
  • ½ Teaspoon Fresh Ground Black Pepper
  • 14 oz Smoked Sausage, Sliced Thinly
  • 1 Bay Leaf
  • 5 Garlic Cloves, Minced
  • ½ Teaspoon Salt
  • 3 Cups Hot Cooked Long Grain Rice
  • ¼ Cup Green Onions, Chopped
Instructions
  1. Combine the first 12 Ingredients into your Crock Pot. Cover with it set to High Heat.
  2. Let it cook for 5 Hours.
  3. Discard the Bay Leaf. Add in the Salt. Stir.
  4. Spoon over Cooked Rice and sprinkle on the Green Onions before serving.
