Creamy Apple Coleslaw
Recipe Type: Side Dish
  • 2 Cups Shredded Green Cabbage
  • 1½ Cups Shredded Red Cabbage
  • ½ Cup Shredded Carrot
  • 1 Granny Smith Apple, Chopped
  • 2 Tablespoons Light Mayonnaise
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Apple Cider Vinegar
  • Juice From 1 Lemon
  • 1 Tablespoon Celery Seeds
  • Kosher Salt, To Taste
  • Fresh Ground Pepper, To Taste
  1. Take a large bowl and combine the Green Cabbage, Red Cabbage, Carrot and Apple.
  2. In another bowl, whisk together the Mayonnaise, Olive Oil, Apple Cider Vinegar, Lemon Juice, Celery Seeds, Salt and Pepper.
  3. Pour the dressing over the Cabbage Mixture. Use a rubber spatula to mix together well.
  4. Cover bowl. Place in the refrigerator and let it sit for at least an hour.
  5. Serve cold.
