Crock Pot Corned Beef
Recipe Type: Main Entree
  • 2 Lbs New England Style Grey Cured Corned Beef Brisket, All Fat Trimmed
  • 1 Cup Frozen Peas
  • 2 Carrots, Peeled and Cut Into Chunks
  • 2 Parsnips, Peeled and Cut Into Chunks
  • 1 Small Head Cabbage, Cut Into 6 Wedges
  • ¼ Cup Fresh Parsley, Chopped
  • 2 Bay Leaves
  • ⅛ Teaspoon Whole Peppercorns
  1. Place Brisket, Carrots, Parsnips, Peas, Parsley, Bay Leaves, Peppercorns into a Crock Pot. Add enough Water so that it covers the brisket.
  2. Cover and Cook on High setting for 1 Hour. Then set the Heat to Low until brisket is fully cooked through.
  3. Add Cabbage Wedges into the Crock Pot. Cook on Low for 3 Hours or until tender.
  4. Slice the meat before serving and Enjoy!
