We are always on the lookout for new ideas for lunch that are affordable and easy to make. This week, we have a special treat for you! Bell Peppers have been put on the back burner because many people aren’t so sure of how to use them without sauteing or roasting. These are a few quick lunch ideas that are great for both adults and kids alike.
If you are really on the run and looking for a grab and go option, pick up some mini peppers at the grocery store and stuff them with string cheese. It is low fat and super fun. You’ll enjoy the taste as the kid’s play with the string cheese! This is a totally kid friendly snack.
What we like to call Shamrock Toasties are great during St. Patty’s day but can be a rockin’ dish all year long! All you need to do is toast an English muffin, add a slice of green pepper and sprinkle with your favorite shredded cheese. (We like the four cheese blend.) You may toss in the microwave to melt the cheese or eat plain.
This last pepper dish is easy enough to do for a quick lunch and creative enough to set out for guests at a cocktail party. They are bell pepper nachos with a twist. Mix together 1 part softened cream cheese with 1 part fat free yogurt. Cut your pepper into nacho shaped bites and spread mixture on top. Sprinkle bacon bits and bake at 350 degrees for 15 minutes. When they come out they are a pepper poppers dream!
